Newbie with some old? Very old Knives

Hi,

I have 3 old French carbon steel knives I am trying to research. Each is about 16' long and has the birds beak detail on the end of the handle

-#1 is an old sabatlier (rue st honore 8) it has very small brass pins in the handle

-The middle one says ( A Tichette)

- the bottom one says ( Bridge Co NYC handmade in France). Pretty sure that one is late 1960's/ early.1970's.

Any info/ opinions would be appreciated. Thanks
