They are probably worth restoring, depending on condition. Both vintage no longer made knives.Have these two Japanes kitchen knifes I got in a lot. Can anyone identify them? Trying to figure out if they are worth restoring.
The veggie knife is Azuma Katsuhiro 東 勝弘
The little deba is an Ibuki 伊吹. Because it is stamped Seki Magoroku 関孫六, it may be
an early Kai product.

I found the same knife (katsuhiro) for 26 euros, but the blade is damaged. Is there any information about the steel of the knife or the value?
